1 cup of chicken stock
1 cup uncooked couscous
1 can chickpeas
1 plum tomato, chopped
1 oz feta cheese
1/4 cup sliced olives
1/2 red onion
2 tablespoons fresh parsley
2 tablespoons red wine vinegar
2 tablespoons EVOO
2 tablespoons lemon juice
S and P
4 chicken breasts, cooked and chopped
Cook couscous in boiling stock. Remove from heat and cover. Fluff with fork. Combine couscous with remaining ingredients.
...leave out the chicken and you have a side dish
